Fall 4 week cooking series begins Thursday October 8th. Classes will be every Thursday in October (10/8; 10/15; 10/22 and 10/29) from 1:30pm – 3:30pm. Sign-up now; space is limited to 12 people.

We are thrilled to again be teaming up with Janet Oliver of Be Well Asheville to offer our 3rd healthy cooking series at UNCA this fall. Janet is the owner of Be Well Asheville and is passionate about healthy living and great tasting food.  She can’t seem to get enough of trying new recipes and loves teaching people how to prepare delicious, healthy foods quickly. A perfect partnership for us!

Healthy Entrees” is a 4-week cooking series spotlighting fun, healthy meals.  Just in time for fall we’ll prepare easy entrees using seasonal ingredients and spices. Recipes may include:

  • Pumpkin Quesadillas
  • Rustic Root Vegetable Galette
  • Coconut and Apple Fall Curry
  • Baked Polenta and Fall Vegetables
  • Moroccan Chicken Tagine with Saffron Cous Cous
  • Bacon and Butternut Squash Pasta
  • Squash Fritters with Lemon Dill Sauce

Emphasis will be placed on using spices and seasonings to flavor lower sodium and lower fat dishes. This class is geared for the home cook who wants to expand his/her palate and try some new tastes in the kitchen. Participants will work in teams.

  • Where/When are we meeting? Where should I park?
    The class will be held in the Community Kitchen at UNC-A’s beautiful Wellness Center (Room 346). We will start promptly at 1:30 on Thursdays and conclude by 3:30 pm. Unfortunately, on-campus parking can be challenging. Carpooling is encouraged and you will need to find parking marked for “Visitor” in order to avoid the dreaded UNCA security ticketing. There are a few spots for visitors at the Wellness Center, but they are often taken early.
  • What should I bring?
    UNCA requires that you wear closed footwear (both closed toe and closed heeled) and requests that long hair be tied up or back. Because we’ll be working around gas stoves and ovens, please avoid loose, flowing types of clothing. You will want to bring an apron, chef’s knife (if you have one you like to use), and some Tupperware or other containers to take home some food). If you have them, you may also wish to bring both dry and wet measuring cups and spoons. While the kitchen is well equipped, measuring utensils are sometimes in short supply.
  • What will we be cooking?
    I have been working to develop healthy entree recipes. Each class will center on a specific protein (eggs, fish, chicken, beans). You will work in teams (probably of two people each) to make one entree per week. My assistant, Jane Kennedy and I will “float” – helping where needed. You will leave each class with the recipes for all four entrees made that week. We’ll be tasting our creations, and you may take home portions of what we cook.
  • What is the cost of the class? $160 for all 4 sessions.
  • How do I pay for the class? Please make your check to Be Well Asheville and give it to Charlene at Training Partners. Or, you can simply bring it to the first class.
